Martin Parr (1952) is a British documentary photographer, journalist and collector. He is known for his photographic projects with a critical view of modern society. Families, food and tourism are the common thread in his work with an exaggeration of consumerism and tourism. He made many photo books and is known for his intense saturated colors. He puts everything under a microscope, often with unintentional humor. With images and quotes he often brings viewers uncomfortably close.

This work inspired us to create the very flat but oh so delicious:

Fish & Chips

8 equally sized pieces of white fish
Flour, salt, beer
3 potatoes in wedges

Mayonnaise
Finely chopped tarragon, chives & parsley
Spoon of capers
60 grams of finely chopped pickle

Pat fish dry and sprinkle with lemon zest, tarragon and parsley. Make mayonnaise and add tarragon, parsley, capers, finely chopped pickle. Then use a satay skewer to coat the fish steaks with beer batter (flour mixed with beer).

Fry in the fryer
Fry potato wedges in second fryer

Serve with the ravigote sauce and some coleslaw
