The beautiful work by Ger Gerrits is entitled 'Indian scouts pollution alarm' and is made with the primary colors of yellow, red, blue and black. It inspires us to create a dish of Tortilla with black beans and strong-smelling herbs with a soothing tomato salsa.
Fresh Tortilla with black beans, red tomato salsa and blue violets
Cornmeal
Water
200 grams of tomatoes cut into pieces with oil, coriander and salt
200 grams of black beans
Mexican Spice mix:
1 tbsp cumin powder
1 tbsp smoked paprika powder
10 grams of coriander
1 teenage garlic
10 grams of oregano
halve chopped onion
1 finely chopped chili pepper
1 tbsp salt
2 tsp turmeric
Preparation:
Mix all the herbs in a container and store the herb mix in a closed jar. Mix the corn flour with a little water and make a dough; let it rest for 30 minutes and kneel again. Make flat pancakes and let them rest again. Let the beans simmer over the fire with the herbs. Fry the Tortillas on a flat cast iron plate on both sides for about 2 minutes. Fill the tortillas with the bean mix with tomato salsa. Garnish with blue violets.
