A painting by Vincent Van Gogh was known for a long time as Red Cabbage with Onions. When chef Ernst de Witte saw the painting, he knew something was wrong. The bulbous plants are not onions at all, but garlic. The museum hired a research team and then changed the name of the painting. Red cabbage with garlic is now also on the menu of Restaurant Feu in Utrecht. Van Gogh himself had not given the work a title, which is why the Van Gogh Museum has now renamed the work. It inspired us to create a dish of (again) red cabbage with...garlic.
Cut half a red cabbage into 6 parts and spread with a mixture of 4 tablespoons of butter, 3 cloves of garlic, 75 g of grated Parmesan cheese and some panko. Grill this in the oven for about 30 minutes and season with salt flakes, pepper and the best balsamic vinegar you can find.
